If you're anything like me you can never remember which is and which isn't gluten free. In perusing Tastespotting I came across a picture of a lovely libation and clicked on the link which directed me to the blog Cupcake Project. Holy Cow! I came across recipes for both Bailey's and Kahlua and just in time for New Year's Eve!
I'm not sure from where the original recipes came, but many thanks to Cupcake Project for making them mainstream!
Kahlua - Cupcake Project Blog
6 cups brewed coffee
1 pound light brown sugar
3 1/2 tablespoons vanilla extract
1/2 liter of vodka
While the coffee is still hot, mix in the brown sugar. Let cool. Mix in vanilla and vodka. Serve over ice, in mixed drinks like a frozen mudslide, etc.
Homemade Baileys Irish Cream Recipe - Cupcake Project Blog
1 cup light cream
14 ounces sweetened condensed milk
1 2/3 cup Irish whiskey
1 teaspoon instant coffee
2 tablespoons Hershey's chocolate syrup
1 teaspoon vanilla
1 teaspoon almond extract
Combine all ingredients in a blender and set on high speed for 30 seconds. Bottle in a tightly sealed container and refrigerate. Shake before using. Will keep for up to 2 months.
Frozen Mudslides - Cupcake Project Blog
4 ounces vodka
4 ounces Kahlua
4 ounces Bailey's Irish Cream
2 pints (32 oz) vanilla ice cream
Chocolate shavings for garnish (optional)
Whipped cream for garnish (optional)
Chocolate syrup for garnish (optional)
Blend all ingredients. Garnish with some combination of chocolate shavings, whipped cream, and chocolate syrup. Drink immediately.

Chocolate Peanut Butter Balls from Delight Gluten Free
1 (16- ounce) creamy peanut butter
1 (16- ounce) powdered sugar
1 cup butter, softened
1 (12 once) package semisweet chocolate chips
1 (16- ounce) powdered sugar

- In a large bowl with an electric mixer on medium speed, combine peanut butter, powdered sugar and butter. Beat until smooth.
- Scoop out spoonfuls of batter and roll into 1-inch balls.
- Set on a baking sheet and refrigerate 30 - 45 minutes until firm.
- Line another baking sheet with waxed paper. Place chocolate ships in double boiler. Melt on low temperature, stirring constantly, until smooth.
- Using wooden picks, dip balls into chocolate to coat completely, allowing excess chocolate to run back into pan.
- Place desserts on a prepared sheet. Refrigerate until ready to serve.

Craving pre-made buffalo wings?
I found out from Kandi King from Aldi consumer affairs dept. that the Kirkwood Hot and Spicy wings are gluten free. This is the first pre-made ones I have found!! happy eating!

New restaurant - Bin 48!
I went to a new restaurant Friday night. I asked about gluten free menus items. They do not have a menu per say but will make what you want GF. I spoke with Cheryl Smith, manager who mentioned the chef's MOTHER HAS Celiacs Disease! So..he understands all about cross contamination! I will be bringing my hubby there soon! The name of the place is Bin 48 Wine Bar and Grill. Its located downtown Plainfield. I had the pork chop and it was great! Hope everyone has a wonderful Holiday! Wendy

December 5th meeting
We will be celebrating the holidays with cookies! Please bring your favorite gluten free cookies and a copy of the recipe.
Bob's Red Mill has donated shortbread cookie mix as well as a yellow cake mix. I will be baking up a few batches for us to try and I will have copies of the BRM recipes available for everyone.
We will discus holiday survival and strategies to stay happy and healthy while celebrating with "wheat eaters."
Information and discussion on currant clinical trials.
Jewel/Osco Caton Farm Road and Rt. 59 (South Plainfield) will host a Gluten Free Health Fair from 1-3. The fair will include product sampling, free product, free tote bags, and a chance to enter and win a basket filled with gluten free food.
Please keep in mind our next meeting will be February 6, 2010
