The University of Chicago Celiac Disease Center will hold another successful free blood screening on Saturday, October 9, 2010. In addition to screening 500+ people for Celiac Disease--thanks to the generosity of Prometheus Laboratories--a panel of experts will take questions from the audience and exhibitors will showcase delicious gluten free products.
Registration is required for the screening. Please call UCCDC at (773) 702-7593 after September 1st to register. The Q&A and exhibits are open to the public; no registration is required.

Gourmet Galaxy: UCCDC Annual Fundraiser
It's again time for The University of Chicago Celiac Disease Center's Annual Fundraiser. This year it will take place on Wednesday, May 6 from 6-9pm at Chicago Hilton and Towers. Tickets are now on sale for $150 each. While the price may seem expensive, a good portion of it is tax deductible and being able to walk up to 25 different chef stations and eat everything has a value! In addition to hosting the 'large' fundraiser, there will be two other fundraisers. One will take place at Maggiano's in Naperville on Saturday, March 14; the other will take place at Highland Park Centennial Ice Arena on Saturday, March 29. For more information on both of those events, click here.

Save the Date!
Thrive Allergy and Gluten-Free Expo will take place at McCormick Place on Saturday, April 18 and Sunday, April 19. There will be presentations by UCCDC and GIG as well as those geared toward allergy issues. In addition, there will be cooking and baking demonstrations by Jules Shepherd as well as exhibitor demonstrations, samples, etc. The event costs $10 for one day or $15 for both.

Oats from the Source...UCCDC
Greetings Gluten Free Wikaduke Participants,
This afternoon I had a conversation with Carol Shilson who is the Director of the University of Chicago Celiac Disease Program regarding the great oat debate. Despite what may otherwise be said on this blog and elsewhere, UCCDC believes that PURE oats are safe.
Carol said that PURE oats eaten in moderation of one cup per day should be fine for those with Celiac Disease. While there are other brands, Cream Hill Estates is a brand of uncontaminated and tested oats. Don't eat regular standard oats due to the possibility of cross contact/contamination.
Carol mentioned that a very, very, very small percentage of Celiacs react to oats BUT it's NOT a Celiac Disease reaction despite how it feels. Because the gluten-free diet is rather low in fiber, our bodies aren't used to eating it. She said that the fiber in oats may cause Celiac-like symptoms due to not eating high fiber food.

Gluten Containing Ingredients
Perusing the University of Chicago Celiac Disease Center website, I came upon a great resource listing gluten and gluten-free ingredients.
At last weeks meeting someone mentioned dextrin as a potential source of gluten. The list does indeed include dextrin as an ingredient that might possibly contain gluten although it mentions that the two large US producers of dextrin use cornstarch.

UCCDC Celiac Screening
Registrations begins on August 15 for the University of Chicago Celiac Disease Center's free blood screening to 500 potential celiacs. The screening will take place on Saturday, October 18th from 8:30 - 12:30. Pre-registration is MANDATORY. Call 773-702-7593 to register after August 15th.
A few GF Wikaduke participants have volunteered at the screening in the past. If you're interested in volunteering speak or email Mary. FWIW, the rumor has it that DaLuciano's provides trays full of their mouthwatering sugar cookies for sampling on the day of the event. Want cookies? Volunteer!

Hungry for a Sandwich?
Wild Oats in Hinsdale will be hosting a gluten-free sandwich sale on Saturday, October 27 from 12 Noon until 2:00PM. Special Eats will make the GFCF bread. Each sandwich will be made with all-natural deli meats and served with fruit, rice crisps and a drink. The cost for adults $7 and $5 for children.
The proceeds from the event go to The University of Chicago Celiac Disease Center.

Univ of Chicago CD Program Luncheon
The University of Chicago Celiac Disease Program's Annual Spring Benefit, Memoirs of A Celiac Gourmet Gluten-Free Luncheon will take place on Saturday, April 21st. Enjoy a delicious gourmet, gluten-free meal along with live and silent auctions and a fabulous raffle! The event takes place at Ben Pao Restaurant in Chicago from 11AM to 2:30PM.
